I've found x86-64 documentation from AMD64 manuals online but I haven't found any official documentation at all that describes x86 in detail. I have general knowledge in a lot of areas but I want to start with the basics (understanding assembly and the architecture it was designed for).

Click through there long enough and you'll find most of the official AMD docs and other miscellaneous articles on x86.

intel has a very nice set of pdfs.... that's one of the best source of information.

I would recommend you Volume 1 to 3 which should give you a very deep knowledge of the inner workings of x86
