This is my first post on this board i hope you can understand my poor english because , i am from germany . Also , if i e.g have hacked a server and have root access and this thinks , how can i hack than the network ? Maybe with a network sniffer who brute the passwords and usernames , but i didn´t find somethink like that. Perhaps you guys know some good network/password sniffer .

If you want to sniff all traffic on the Network the system is situated on, one of many packet sniffers will do. Some good ones include Hunt, Sniffit, Ethereal and EtterCap. Here's some links to download some packet sniffers:
